Happy St. Patrick's Day!

This is the menu I'm serving tonight; it uses traditional St. Patrick's Day ingredients, but with a fun twist. Corned Beef and Cabbage Tarts combine sauteed cabbage and onion with cheese and cubed corned beef; they are delicious. This rich main dish needs some contrast in temperature and texture, so Melon Medley is on the menu too. If you'd like, you can serve a cup of Tangy Tomato Soup (minus the cheese) as a starter. And for dessert, Starlight Mint Surprise Cookies, for a bit of green and a crisp, sweet finish.
