Happy Cinco de Mayo!

Today, the 5th of May, celebrates the Mexican victory over the French army at the “Batalla da Puebla.” To honor that event, serve this dinner tonight. Mexican Peacocks aren't a traditional Mexican food, but are delicious anyway. Boneless chicken breasts are stuffed with a creamy avocado mixture and baked. Serve them with Fresh Fruit Salad and Southwest Flatbread. And this dinner deserves an easy and festive dessert: Tortilla Sundaes.
