Sometimes a great idea just pops into your head. I'm starting a new series here at Busy Cooks: Recipe Makeover! I'm going to start with a complicated recipe and take you through the steps I use to make the recipe simple and easy to make. And I'd love to get suggestions for recipes from you; just email me!
This salad is a case in point. I took a look at this long recipe for Grilled Shrimp Salad and, using some frozen cooked shrimp and a few items I had on hand, created Shrimp and Black Bean Salad which is absolutely delicious and so much easier! All you need to serve with this fabulous main dish salad is some hot, tender Cornbread and Chocolate Chip Cookie Dough Brownies for a luscious dessert.
