Holiday Menu: Mexican Peacocks

Mexican Peacocks are a wonderful holiday entree; chicken breasts stuffed with a butttery, garlicky avocado mixture, coated with bread crumbs, then fried and baked to tender perfection. Serve them with some fresh homemade bread, a sweet and creamy fruit salad, and a spectacular dessert. And it can all be made ahead of time! Enjoy.
