During the winter months when you're often making larger cuts of meat, think about leftovers. Cook Once, Eat Twice offers wonderful recipes that just don't seem like leftovers. For instance, Pesto Salmon Fettuccine is a leftover dish, made from extra salmon steaks I saved from the weekend. Serve it with Buttered Baby Carrots, crisp and light Herbed Spinach Salad with Apple Pecan Layer Cake for dessert.
