Everyday Menus: Roasted Potato Salad

Roasted Potato Salad is one of my favorite summer main dish salad recipes. Roasting the potatoes gives them a wonderful soft interior and crisp exterior, with good caramelization. And the green beans, first boiled and then roasted along with the potatoes, are tender chewy and sweet. Serve it with Seasoned Breadsticks, with incredibly lush Chocolate Peanut Butter Ice Cream Pie for dessert.
