Everyday Menus: Salad for Breakfast

In the summer, I like serving salads for breakfast. Whether it's a main dish salad or a fruit salad, these foods are surprisingly good first thing in the morning. And you make them ahead of time, so when you're barely awake, just spoon some salad into a bowl and start waking up. Barley Orange Salad (pictured) is a particular favorite. Not only are you getting a slightly sweet treat, but barley is so good for you, and this salad is gorgeous too. Serve it with some whole wheat toast spread with whipped honey, grapefruit juice, and hot coffee and you'll be on your way.
