Everyday Menus: Salad for Breakfast

In the summer, I like serving salads for breakfast. Whether it's a main dish salad or a fruit salad, these foods are surprisingly good first thing in the morning. And you make them ahead of time, so when you're barely awake, just spoon some salad into a bowl and start waking up. Barley Orange Salad (pictured) is a particular favorite. Not only are you getting a slightly sweet treat, but barley is so good for you, and this salad is gorgeous too.
