Everyday Menus: Wild Rice Salad

You all know that wild rice is one of my favorite ingredients. It can be used in everything from dessert to soups to salads. This recipe highlights this nutty, chewy seed in a spectacular way. You can make it vegetarian by leaving out the chicken and adding some diced cheese; Havarti or Muenster would be my choices.
