Everyday Menus: Roasted Potato Salad

This is one of the most satisfying salads in my repertoire. You can omit the chicken and it's a fantastic vegetarian main dish salad. Roasting the potatoes creates the perfect texture and adds crisp golden edges and a bit of caramelization. Love potato salad but I don’t think that I have ever tried the roasted variety. I’m really curious about the caramelization. And then there are the chocolate butterscotch Naniamo Bars… those are calling my name as well.
