Quick Breads

When I was in college, there were a few cafeteria foods I really loved. One was 'Nordic Munch', a ham and cheese sandwich that had just the right combination of textures and flavors, and another was the banana bread that was served every Sunday night. I never did get the recipe, but the smooth, tender texture, with an even crumb and no wet spots was my ideal then. The recipe I use now for Banana Bread, an adaptation from an old cookbook, is even better than that long-lost recipe. I'm going to make some right now! Join me. Where is your recipe for the Nordic Munch?? It sounds so good! I’d love to try it. I already have the recipe for Banana Bread - in fact when I buy bananas, my son purposely doesn’t eat them - then when they are nice and brown he says, Aw Gee Mom - we didn’t eat the bananas in time - I guess you’ll just have to make banana bread now! I know I’m gonna be sending him care packages filled with banana bread next year when he goes off to college.
I wish I knew! It was a hot sandwich, with ham and Swiss cheese melted between a nice chewy roll, with some kind of dressing - probably Thousand Island. I really should try to recreate it!
