How to Measure (and How Not to Measure) Flour

After reading reviews of recipes on About.com and around the web, I think it's time for a refresher course on how to measure flour. This is one of the most common mistakes made when cooking and baking, and it's so easy to correct. Here you'll see, step by step, how to measure flour correctly, and the wrong way to do it. If you want the lightest, most tender baked goods, take an extra few seconds to measure accurately.
