Everyday Menus: Crockpot Mexican Pork Stew

Tuesday November 11, 2008
It's drizzling a cold, cold rain today, and it's freezing on the roads. And I have a rich and easy stew cooking away in my slow cooker. There's nothing more comforting - or easy! Serve this rich Mexican stew over hot cooked rice along with a crisp, cool coleslaw and some simple cookies for dessert. Yum.

That sounds insanely good! I swear I can practically smell it.

My favorite comfort food is grilled cheese and tomato soup… here’s my “dressed up” recipe, with danish havarti, tomatoes, french bread and roasted tomato and red pepper soup: http://urbzen.com/2008/11/13/comfort-food-for-grownups/
