I love all the 3-ingredient healthy summer sides from 'Simple summer sides'. My favorites are the red potatoes, with smashed peas and mint and the grilled corn with avocado and cilantro. They all take very little time to make and highlight the best seasonal produce.

Every one is incredible - the turkey burger features an avocado spread and pickled onions and jalapenos with shredded romaine. There's also a salmon burger that folds smoked salmon and dill into the patty and is spread with grainy mustard and sandwiched with watercress."
