Risotto is the perfect recipe for a cold winter's night. It's comforting, creamy, delicious, versatile, and inexpensive. And, despite what purists say, you don't have to use arborio rice. My Chicken Risotto recipe works perfectly fine with long grain rice. Just keep stirring and adding the hot liquid a little at a time; that's what forces the rice to release its starch as it cooks, making a creamy sauce. Yum.
