Everyday Menus: Salmon Frittata
Salmon Frittata is a delicious quick and easy recipe perfect for busy weeknights. I like to make it by first making grilled salmon, then Pesto Salmon Fettuccine and then the frittata. But you can use canned salmon, leftover cooked pasta, and 1/4 cup of prepared basil pesto instead. Serve it with a tossed green salad and some delicious bars for dessert.
