This weekend I'm focused on Easter and our traditional dinner served mid afternoon on Sunday. Because there are so many things to do before the holiday begins, Friday and Saturday menus are one dish, simple meals, preferably cooked in the crockpot.

Because Easter dinner is usually planned around a lot of meat, I like starting the weekend with a meatless dinner. I especially love this easy frittata recipe that takes just minutes to make.

Saturday Cooking and Menus
Saturday will be spent getting ready for Easter! Since you will be home and working around the house, why not make some fabulous sandwich rolls for that Easter ham? Cheese and Carrot Sandwich buns are the best roll recipe I have ever made (besides the aforementioned Parker House Rolls, of course), and because they are so flavorful, all you need is some juicy ham and spicy mustard for the perfect sandwich. Have a simple breakfast with excellent muffin batter that you can use all week, lunch from the deli, and keep that crockpot busy with another delicious one dish meal.
