Vegetarian Slow Cooker Chili

I tried an experiment yesterday, using frozen textured vegetable protein crumbles in a crockpot chili instead of browned ground beef. The chili was wonderful! I don't think I'll even make chili with real beef again. I combined the crumbles, still frozen, with chopped onion, garlic, cans of kidney beans and diced tomatoes, chili powder, cumin, and water. It cooked on high for 4 hours; we ate it with cheese crackers and a green salad.

If you have tried meat substitutes in the past and didn't like them, try them again! Ground beef substitutes look just like cooked, crumbled ground beef and have exactly the same texture. They are a little sweeter than ground beef, so I like using them in highly spicy recipes. Chicken chunks made with vegetables and grains are really delicious; I like Morningstar Farms products. When I first tasted these, I honestly thought they were real chicken.

So here are some recipes I developed to use these products. Besides the health benefits of going without meat once in a while, these products are also faster to use and are cheaper too! Of course, you can make these recipes with the real thing too; it's up to you. But please try these foods at least once; they are that good! Have a wonderful weekend.

Friday Supper

  • Crockpot TVP Chili
    This has to be the fastest chili ever; just dump ingredients into your crockpot and turn it on. You can use frozen chopped onions if you'd like for an even easier recipe.

    These tender scones are full of sauteed onions. They're really fabulous with the hot and spicy chili.

Saturday Breakfast

  • Swiss Eggs
    I love these fluffy and tender eggs, seasoned just right with dry mustard, salt and pepper.

Saturday Lunch

  • Sizzling Seafood Sandwiches
    Any deli seafood salad works well in this recipe. The cocktail sauce as a condiment really makes these sandwiches snappy!

Saturday Dinner

  • Chicken Tostadas
    I just love this recipe. If you can't find ripe avocados in your supermarket, substitute frozen guacamole, mixed with a bit of sour cream.
  • Orange Cream Salad
    This cool and creamy make ahead gelatin salad is a great complement to the spicy and crunchy tostadas.
  • Pecan Caramel Tart
    If you love pecans, this is the pie for you! Melted caramel coats the nuts, and the whole thing is drizzled with melted chocolate. Yum.

Sunday Brunch

  • Impossible Breakfast Pie
    Hash brown potatoes, vegetables, eggs and cheese combine to make a delicious pie perfect for brunch.

Sunday Supper

  • Mexican Pizza
    Everybody who has ever tried this recipe just loves it; nobody can tell it uses TVP. It's my brother-in-law's favorite meal, and my husband loves it too. You can make the different components ahead of time, then just assemble and bake when you're ready to eat.
  • Pear Salad
    Juicy, tender and sweet pears are perfectly complemented by a celery seed dressing, soft baby greens, and crisp walnuts.
  • Coconut Chip Macaroons
    These chewy, tender, and sweet macaroons are a wonderful end to this easy leisurely meal.
