Everyday Menus: Italy Tonight

Let's go to Italy for today's menu. A one dish casserole that can be made ahead is a great boon for the busy cook. When you have some time to putter around the kitchen, make this casserole and refrigerate it before baking. Then you can bake it and eat anytime in the next 48 hours. I love the combination of creamy cheese filling, topped with a beefy tomato sauce. The name of this casserole is a little misleading; the beef isn't in the stuffing, but in the sauce surrounding the stuffed manicotti noodles.

Easy Sourdough Bread is a great accompaniment to this hearty main dish. The 'sour' in the bread comes from the yogurt or sour cream and vinegar used when making the dough. Ground ginger adds a nice kick to this chewy, crusty bread. And Easy Tartufo is another great make-ahead dessert. Be sure to set your dinner table with a red checked tablecloth and some fat candles in chunky pottery candleholders. And pass the red wine!

  • Beef Stuffed Manicotti
    You can use leftover roast beef in this delicious recipe, or buy some sliced beef from the deli. Ground beef is an acceptable substitute; just cook and drain the meat before adding it to the tomato sauce to simmer.

    If you have the time, please make this recipe! It's a very simple yeast bread recipe, and the taste will knock your socks off.
  • Easy Tartufo
    Chocolate ice cream studded with chopped cherries is coated with cookie crumbs, then enrobed in thick chocolate and frozen in this make ahead recipe. It's just spectacular, and so easy to make!
