Everyday Menus: Crockpot Meatball Dinner

Frozen, fully cooked meatballs are one of the best convenience food items developed by food companies in the last few years. Since the meat is fully cooked, you don't have to worry about Food Safety and special handling. They do contain soy as extenders, so are more tender and flavorful than regular meatballs. And, you can find low fat versions in your grocer's freezer.

This crockpot recipe has a touch of Mexico. Use your favorite taco sauce to add heat; whether the recipe is mild or spicy is up to you. You can substitute different kinds of bell peppers, add mushrooms or olives to this dish, and top it with Pepper Jack cheese instead of cheddar.

Frozen Banana Salad is easy and delicious. Make it at the same time you prepare the entree and freeze until dinnertime. Cheese crackers are a great recipe to store in your freezer, then reheat in a toaster oven to accompany any soup.
