Everyday Menus: Lunch on the Run

Lunch is often eaten on the run! Whether you are doing errands on your lunch hour, on your way to a sporting event on the weekend, or just don't want to stop what you're doing, having a sandwich filling waiting in the fridge can be a lifesaver.

Almost any Sandwich Spread can be made ahead of time and just stored in the fridge for hungry snackers or a quick lunch. These recipes also make great lunch box sandwiches; pack them in a small container and add some washed and dried lettuce in a separate bag along with pita bread halves. All you have to do is assemble and eat! Because kids love to play with their food, this type of lunch just might be eaten instead of being traded or overlooked.

I love pita breads for sandwiches because they are sturdy, can be made of whole grains for maximum nutrition, and they are just plain delicious. Add some fresh fruit or vegetables (carrot sticks, small bunches of grapes, pepper slices, or melon wedges) and a cookie or two and you have a satisfying lunch that's easy to eat no matter where you are.

    Choose your favorite vegetables, cheeses, and meats in this super-easy sandwich filling. It will keep, well covered, in your refrigerator for up to three days, if it lasts that long! Line the pita breads with crisp lettuce leaves for more crunch.
  • Applesauce Granola Cookies
    Use your favorite purchased granola in these crunchy, hearty, sturdy cookies, or make your own. These cookies store very well at room temperature in your cookie jar, and make great snacks or even breakfast along with some orange juice.
