Everyday Menus: Make Ahead Breakfast

Now that we have about a week of dinner menus in the Everyday Menu series, let's move on to a breakfast menu. For lazy day weekend mornings, this is the breakfast I would choose. Make the entree and the salad the night before, and whenever you wake up on Saturday or Sunday, breakfast (or brunch) is ready in minutes.

The entree, Stuffed French Toast Bake, is a make-ahead recipe that bakes up to a beautiful, puffy golden brown in just 25 minutes. There are many varieties of flavored cream cheese that would work very well in this easy recipe; choose your favorite. Or substitute plain cream cheese mixed with your favorite fruit jam. This super-easy salad is a real surprise; fruit frozen with sweetened buttermilk is really delicious and refreshing. It's also a great recipe to have on hand for hungry snacking teenagers.

Make Ahead Breakfast Menu

  • Stuffed French Toast Bake
    One of the best things about this recipe (aside from the taste!) is that you don't have to stand by the stove cooking french toast while the rest of your family eats. It's all ready at the same time, perfectly golden and crisp.
  • Frosty Fruit Salad
    Did you know that buttermilk is very low in calories? It is the thick liquid left over after cream is churned to make butter. Because it is thick, most people think it's full of calories; but it's not. Combined with sugar and fresh fruit, this frozen salad is a real treat.
