Everyday Menus: Spinach and Rice Rollups

This pretty and delicious main dish is also low in fat. I developed it for Pillsbury back in the 1980s. I was browsing through cookbooks in the Pillsbury library and came across a side dish casserole that combined spinach with rice and cheese. Since I was looking for ideas for stuffed main dishes, I thought that recipe would be a good filling for fish fillets. And it turned out great!

Serve this easy main dish with some crunchy and tender scones hot out of the oven, and a super-easy fruit salad made with canned fruits. For dessert, Fastest Cheesecake is delicious and ready to chill in about 5 minutes.
