This elegant menu is special enough for company, yet it's so easy. Turkey tenderloins can be found, usually two to a package, in your grocer's meat department. They are very low in fat, and tender and juicy when cooked correctly.

This recipe for Turkey Cordon Bleu is a variation on the traditional recipe, and is much easier. It turns out perfectly every time; juicy, tender, and so flavorful. The side dish of Couscous and Chickpeas is made in seconds and is a healthy, hearty complement to the turkey. And really good, fresh asparagus can be found in your grocer's produce department this time of year; simply roasted, it is very delicious.

And this sheet cake not only serves a crowd, it's easy to make. Save leftovers for breakfast!

Enjoy.

Turkey Cordon Bleu

  • Turkey Cordon Bleu
Havarti or Gruyere cheese would be upscale substitutes for the Swiss cheese in this wonderful recipe.
  • Couscous and Chickpeas
This is such an easy side dish; I love the flavor and texture combination of the tender chickpeas with the slightly chewy couscous.
  • Roasted Asparagus
Roasting brings out the sweet flavor of asparagus, and keep the texture crisp-tender. You can drizzle the spears with butter instead of olive oil for a different flavor.
  • Graham Cracker Sheet Cake
The taste and texture of this cake is just superb. And I love the combination of cream cheese and carame ice cream topping in the frosting. Yum.
