Even though I work from home, I always look forward to the weekends because my husband stays home and we take a break from our schedule. Since we don't like to shop on Saturday or Sunday, I make sure that by Friday I have a plan for our meals for the next few days and all the shopping is done.

Weekends are a wonderful time to try recipes that sound intriguing, those that take a bit more work, and those that aren't difficult but require you to putter around the house while they rise or ferment or otherwise pull themselves together. Make a coffeecake or batch of cookies to see you through the week ahead. A gelatin salad full of fruit is a great way to get your daily dose of Vitamin C while providing a cool and easy breakfast for a few days.

This is what I will be making at our house this Friday, Saturday, and Sunday. Salmon and asparagus look wonderful in my supermarket, so they are the focus for a weekend's worth of good cooking. Let's get ready for the weekend!

Recipes for the Weekend

Friday Night Company

I love this menu - the recipes don't take much fussing. Make the apple crisp and bread ahead of time, then just grill or broil the salmon and roast the asparagus and dinner's on the table. Grill two extra salmon steaks for the Pesto Salmon Fettuccine, and roast some extra asparagus spears for the Sunday night Asparagus Pizza.

Saturday Breakfast

Set out fresh fruit and cereals so your family members can get their own breakfast in a nice leisurely manner. Cut up the leftover fruit and make Frosty Fresh Fruit for Sunday dinner.

Saturday Lunch

With this easy sandwich spread in the fridge, snacks are only minutes away. These sandwiches are great for after school snacks during the week.

Saturday Dinner

Using the leftover grilled salmon from last night, this elegant and delicious dinner takes just minutes to make.

Sunday Brunch

Both of these recipes are best if made ahead - have some fun Saturday afternoon puttering in your cozy kitchen. And make extra waffles and freeze for a quick weekday breakfast of waffles from the toaster!

Sunday Dinner

This pizza is a version of one from Dinah Shore. The combination of savory hot pizza with cold fruit salad is really delicious.

Any leftovers can be eaten for lunch and breakfast during the next few days. Make sure to promptly and properly refrigerate leftovers and clearly mark them for storage in your fridge. Enjoy the weekend!
