At the end of winter, everyone needs some help with menu planning. You've used all of your tried-and-true recipes two, three, four, or more times, and have run out of ideas. Well, I'm here to help!
Every single day, I'll post a new menu for breakfast, lunch, or dinner that is not only quick and easy, but delicious and fun too. Check back every day for inspiration.
This fun menu takes you to the southwest. The delicious combination of spicy chicken, cool and nutty avocado, crisp flatbread, and refreshing fruit salad is topped off with a super-easy strawberry margarita dessert.
You can make the bread and dessert ahead of time, and the entree takes just a few minutes to put together and heat. If you'd like, add some more spice to your dinner by using some chunky pottery to set the table, along with some fresh flowers and candles. Ole!
Go Southwest! Dinner Menu
- Tex Mex Chicken Fettuccine
This five ingredient entree is so easy and so delicious. If you like your food extra spicy, add some more chopped chilis or jalapenos along with the chicken. - Southwestern Flatbread
Start with refrigerated dough and end up with a crispy, crunchy, salty and spicy flatbread that's a perfect complement to this meal. - Melon Medley
Melons are readily available this time of year. This sweet and juicy salad provides a cooling note in this spicy meal. - Frozen Strawberry Margarita Dessert
This dessert must be made ahead of time. Take it out of the fridge about 30 minutes before you want to serve it, so it softens a bit. I love the combination of crunchy, salty pretzel crust and sweet and slightly sour creamy filling.
