The Weekend Cook: Mother's Day

This weekend is all about Mother's Day. I always enjoyed cooking and baking for my mom - in fact, working in the kitchen (but it wasn't working to me!) is how I avoided chores like weeding the garden. Who wouldn't rather be in a sunny cool kitchen working with delicious food rather than toiling in the hot sun slapping mosquitos?

This weekend of menus is designed to treat your mother to really easy food that is fun to make too. If you are planning to tackle all of these menus, remember to take more than one day to do the planning, shopping, and cooking. Delegate chores to other family members so you're not exhausted and can enjoy the day too.

And remember to leave a clean kitchen! Have fun pampering your mom this weekend.

Saturday Breakfast

  • Crockpot Cobbler
Start this easy and delicious recipe on Friday night, and wake up to wonderful aromas drifting through the house.
  • Apple Glazed Sausage and Bacon
Do you like bacon or sausage better? With this recipe, it doesn't matter - you get both! I love the flavors in this easy dish.
  • Orange Cream Salad
This delicious salad has to be made ahead of time too, so make it Friday night. It's rich, creamy, smooth, and packed with vitamin C.

Saturday Lunch

Saturday Dinner

  • Salad Bites
Get a selection of deli salads and some frozen mini phyllo shells and you'll have a spectacular appetizer ready in seconds.
  • Grilled Steak with Avocado Tomato Salad
Buy avocados today or Friday, put them in a paper bag and let them sit on the counter and they'll be perfect for this spectacular grilled entree.
  • Breakthrough Salad
My variation of Peg Bracken's famous recipe is full of flavor, color, and crunch.
  • Grilled Asparagus
Asparagus cooked on the grill is tender-crisp, smoky, and so delicious. It's the perfect complement to the steak.
  • Chocolate Mousse Pie
This easy pie is fluffy and rich. To make it even easier, buy a premade chocolate crumb crust. Mom will love it!

Sunday Breakfast

  • fresh orange juice and coffee
  • Scrambled Eggs
This double boiler method is the way my family has always made scrambled eggs. The eggs turn out creamy, light, and perfect.
  • Swedish Tea Log
This recipe, besides being my favorite Pillsbury Bake-Off recipe of all time, is traditional for my family on Mother's Day. Your mom will love this flaky, tender, sugar encrusted coffee cake.
  • Melon Medley
Juicy, sweet melons are a fabulous contrast to creamy scrambled eggs. Make sure you buy the melons on Friday and place them together in a grocery bag to ripen so they are the perfect consistency on Sunday.

Sunday Lunch

These delicious sandwiches are very easy to make and eat, and the salads are cool and refreshing. If the weather is nice, think about eating lunch outdoors on your patio or porch.
  • beverages
  • Brie Peach Sandwiches
You can use other types of fruit in these sandwiches too - nectarines would be a fabulous choice. Just choose what looks best in the supermarket or farmer's market.
  • Black Bean Wild Rice Salad
If your mom loves wild rice, this is the salad for her! I developed this salad one day out of the food I had on hand, and it's since become a favorite.
  • Mango Tomato Salad
This delicious salad provides a perfect counterpoint to the rich sandwich and cool salad.
  • Chocolate Buttersweets
This little cookie is tender and delicious, with a nutty cream cheese filling and a drizzle of chocolate. Mom will love it!

Sunday Dinner

  • Parmesan Sticks
These wonderful appetizers have to be made ahead and are crisp and melting. They are perfect to nibble with some wine before dinner.
  • Turkey Cordon Bleu
This recipe always turns out perfectly. The turkey is moist and juicy and the ham and cheese filling adds wonderful flavor.
  • Spinach Strawberry Salad
I just love raw baby spinach. The texture is so soft and tender, and the flavor is mild and rich. Strawberries are the perfect addition, with their sweet and tart flavor.
  • Crockpot Glazed Carrots
This is the perfect way to cook baby carrots, in my opinion. Make sure you start them 6 hours before dinnertime.
  • Chocolate Chip Cookie Dough Cheesecake
Do you remember the cookie dough craze from a few years ago, when dough found its way into everything from sweet rolls to ice cream? This is my favorite way to use cookie dough. Your mom will be thrilled with this special dessert!
