Mint, Spinach and Lamb Salad

This super refreshing salad is a good use for leftover roast lamb.

Prep Time: 15 minutes

Ingredients:

  • 6 cups baby spinach
  • 1/2 cup mint leaves, chopped
  • 2 cups thinly sliced cooked lamb
  • 2 cucumbers, peeled and sliced
  • 1 cup plain yogurt
  • 1/4 cup apple cider
  • 1/2 tsp. dried mint leaves
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper

Preparation:

In large serving bowl, combine spinach, mint leaves, lamb, and cucumber and toss gently. In medium bowl, combine remaining ingredients and whisk to blend. Pour over salad, toss gently, and serve. Serves 6
