This super refreshing salad is a good use for leftover roast lamb.
Prep Time: 15 minutes
Ingredients:
- 6 cups baby spinach
- 1/2 cup mint leaves, chopped
- 2 cups thinly sliced cooked lamb
- 2 cucumbers, peeled and sliced
- 1 cup plain yogurt
- 1/4 cup apple cider
- 1/2 tsp. dried mint leaves
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. white pepper
