Scald

Definition: Scald means to heat a liquid, usually a dairy product, in a saucepan until it almost boils. It used to be an essential step in breadmaking, since some proteins in milk would interfere with yeast fermentation.

Pronunciation: skahld • (verb)

Examples: Scald the milk and let cool before adding to the flour.
