Cod in Rhubarb Sauce
1-1/2 cups chopped rhubarb
1/4 cup water
2 quarter-size pieces fresh
ginger root, peeled and cut into julienne
1/3 cup apple cider vinegar
2
cups water
1 cup chopped sweet onion
1 red bell pepper, chopped
1/4
tsp. salt
4 cod fillets
Place rhubarb, 1/4 cup water and ginger root in small heavy saucepan. Simmer for 5 minutes and set aside. Combine cider vinegar with 2 cups water and bring to a rolling boil. Add the onion and bell pepper. Cook for 2 minutes, drain well and add to rhubarb. Season with salt.
Broil the cod fillets 4-6" from heat for 10 minutes per inch of thickness, or until fish is opaque and flakes easily with fork. Serve sauce with fish.
