Chicken Drumsticks Five Ingredient Meal

This meal uses nonstick cooking spray, which I don't count as an ingredient. It's like water, salt, or pepper - it should automatically be in your kitchen!

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 8 chicken drumsticks, skin removed
  • 1/2 tsp. pepper
  • 1-1/4 cups bottled alfredo pasta sauce
  • 2 cups grape tomatoes, cut in half
  • 6 oz. pkg. long grain and wild rice pilaf
  • 1 cup packed fresh basil leaves OR baby spinach leaves

Preparation:

Coat heavy skillet with nonstick cooking spray. Sprinkle drumsticks with pepper. Brown drumsticks in pan over medium heat, about 5 minutes, turning frequently. Add pasta sauce and half of the tomatoes. Reduce heat to medium low, cover pan, and simmer for 17-21 minutes until chicken is thoroughly cooked.

Julienne the basil or spinach leaves. Cook rice as directed on package. Add remaining tomatoes and the basil or spinach to chicken in skillet and stir until basil or spinach is wilted. Serve with the rice pilaf. 4 servings
