Any leftover cooked and cubed chicken or turkey can be used in this easy stir fry recipe.

Ingredients:
- 1 Tbsp. olive oil
- 2 fried chicken breasts, cubed
- 16 oz. pkg. frozen broccoli and carrot combo
- 2 garlic cloves, minced
- 1/4 cup water
- 1/2 cup apricot jam
- 1 Tbsp. lemon juice
- 1/4 tsp. salt
- dash white pepper
Preparation:
Heat oil in nonstick skillet and add chicken, frozen vegetables and garlic. Stir fry for 1 minute. Add water and cover. Reduce heat to medium and cook for 6-8 minutes until vegetables are crisp tender.In small bowl, combine apricot jam and lemon juice. Pour over chicken mixture and stir to mix well. Cook for 1-2 minutes longer until hot and serve over hot cooked rice. 4 servings
