Baby carrots are not really 'baby' carrots, but are carrots that have been trimmed down to a smaller size. They are super easy to prepare because you don't have to trim or peel them.
Prep Time: 5 minutes
Cook Time: 6 minutes
Ingredients:
- 1 package baby carrots
- water to cover
- 2 Tbsp. butter
- salt and pepper to taste
Preparation:
Place carrots in saucepan and add water to cover by 1/2". Bring to a boil over high heat. Lower heat to medium and simmer carrots for 3-6 minutes until tender when pierced with a fork. Remove from heat, drain carrots, turn heat off. Return carrots to saucepan and add butter. Place on burner with heat off. Let butter melt; stir gently to coat carrots. Sprinkle with salt and pepper and serve. 4 servings
