This is a version of clam chowder that kids are more likely to enjoy. It seems that most children like chicken!
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
- 3 bacon slices
- 1 onion, chopped
- 2 Tbsp. flour
- 1-1/2 cups whole milk
- 1 cup refrigerated hash brown potatoes
- 1 cup frozen corn
- 6 oz. can white meat chicken, drained
Preparation:
Cook bacon in saucepan until browned and crisp. Remove bacon from pan and reserve for another use. Add onion to drippings in pan and cook until tender, about 4 minutes, stirring frequently. Sprinkle flour over onions and cook 1 minute longer. Add milk.Cook and stir until mixture comes to a boil and thickens. Add potatoes and corn. Bring to a boil, then reduce heat, cover pan and simmer for 10-15 minutes until potato is tender. Add chicken and heat thoroughly. Pour into thermos, seal. If you are serving immediately, sprinkle the crumbled bacon over each serving. 4 servings
