Chocodiles Cooky

By Linda Larsen, About.com

This classic cookie is really delicious; the chocolate and peanut butter combination with a bit of crunch is especially loved by kids.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1-1/4 cups brown sugar
  • 1 cup butter, softened
  • 1/2 cup peanut butter
  • 2 tsp. vanilla
  • 1 egg
  • 2-1/4 cups flour
  • 1/2 tsp. baking soda
  • 2 cups semisweet chocolate chips
  • 1/2 cup peanut butter
  • 1-1/2 cups Special K cereal (crisp rice flakes)

Preparation:

Preheat oven to 350 degrees. Combine brown sugar, butter, and 1/2 cup peanut butter in large bowl and beat until combined. Add vanilla and egg and mix well. Stir in flour and baking soda until dough forms. Press into ungreased 15x10" jelly roll pan. Bake for 15-20 minutes or until just set. Cool slightly.

While bars are cooling, combine chocolate chips and 1/2 cup peanut butter in a microwave-safe bowl. Microwave on 50% power for 2 minutes, then remove and stir until melted and smooth. Stir in cereal. Spread this mixture over slightly cooled bars. Cool completely before serving. 36 bars
