Corn Salsa

This salsa recipe can be made with frozen corn, or you can cut fresh corn on the cob off the cob and mix it with tomatoes, jalapenos, lime juice, and garlic.

Prep Time: 20 minutes

Ingredients:

  • 1 cup corn kernels
  • 1 tomato, chopped
  • 1 jalapeno pepper, minced
  • 1 Tbsp. chopped red onion
  • 1 Tbsp. minced cilantro or parsley
  • 1 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1 clove garlic, minced

Preparation:

Combine all ingredients in medium bowl and mix. Cover and chill 1-2 hours to blend flavors. Serve with grilled meats, or as a dip with tortilla chips.
