By Linda Larsen, About.com

The fish in this super easy crockpot recipe is cooked frozen so it won't overcook and stays flaky and tender.

Prep Time: 15 minutes

Cook Time: 7 hours,

Ingredients:

  • 1 lb. frozen fish fillets
  • 2 potatoes, finely chopped
  • 1 onion, chopped
  • 10 oz. can cream of celery soup
  • 2 (10 oz.) pkgs. frozen corn
  • 1-1/2 cups water
  • 1 tsp. lemon pepper
  • 1 bay leaf

Preparation:

In 3-5 quart crockpot, place potatoes, and onions. Add soup, corn, water and seasonings and mix gently. Cut fish fillets in half and place on top of other ingredients in slow cooker. Remove bay leaf and break fish into chunks. If desired, thicken stew with cornstarch and water mixture. Serves 6
