Egg Fajitas

This simple recipe is made from ingredients you probably have on hand.

Prep Time: 15 minutes

Cook Time: 8 minutes

Ingredients:

  • 2 Tbsp. oil
  • 2 cups frozen hash brown potatoes
  • 1/2 lb. spicy bulk turkey sausage
  • 5 eggs
  • 1/2 cup chopped red bell pepper
  • 1 cup shredded Queso blanco cheese
  • 8 (9") flour tortillas

Preparation:

Heat oil over medium heat in large skillet. Add potatoes and cook, stirring constantly, until lightly browned. Add sausage and cook and stir until sausage is thoroughly cooked and potatoes are browned.

Beat eggs in small bowl and add to potato mixture along with red peppers and green onions. Cook, stirring occasionally, about 4-6 minutes until eggs are set and thoroughly cooked.

To soften tortillas, wrap in microwave safe plastic wrap and microwave on high power for 20-40 seconds until soft. Spoon egg mixture onto center of softened tortillas, top with cheese, and fold up. Serves 8
