Fish Sandwiches

These super easy sandwiches are such a simple recipe. Choose your favorite fish fillet; grouper or red snapper would be delicious. And make your favorite coleslaw for the topping, or stop by the deli on the way home and pick up some crunchy slaw.

Prep Time: 25 minutes

Cook Time: 23 minutes

Ingredients:

  • 1/4 cup tartar sauce
  • 1 tsp. lemon juice
  • 1/2 cup seasoned dry bread crumbs
  • 4 (4 oz.) fish fillets
  • 4 toasted sandwich buns
  • Tomato
  • Prepared coleslaw

Preparation:

Preheat oven to 450 degrees and spray a jelly roll pan with nonstick cooking spray; set aside. Combine tartar sauce and lime juice in a shallow pan. Coat fillets with this mixture, then roll in bread crumbs to coat. Place in prepared pan.

Bake at 450 degrees for 8-12 minutes until fish flakes easily when tested with a fork. Serve on toasted sandwich buns with tomato, cucumber, more tartar sauce, and <a href="http://busycooks.about.com/od/sidevegetablesalads/r/dillcole.htm">coleslaw</a>. 4 servings
