Florentines

By Linda Larsen, About.com

Florentines are an Italian cookie, filled with candied fruit. They are usually made as drop cookies, but this bar cookie version is much easier.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/4 cup butter
  • 1/3 cup whole milk
  • 1/3 cup granulated sugar
  • 1/4 cup flour
  • 1/4 cup honey
  • 1-1/2 cups finely chopped candied fruit
  • 1 cup chopped slivered almonds
  • 1 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips

Preparation:

Preheat oven to 325 degrees F. Spray a 9" square pan with nonstick baking spray containing flour and set aside.

In large saucepan, melt butter with milk and sugar until butter melts and sugar dissolves. Remove from heat and stir in four and honey.

Stir in fruit and almonds and spread in prepared pan. Bake for 30-35 minutes or until mixture is browned and bubbly. Remove to wire rack and let cool for 1 hour.

Melt chocolate chips in small pan over very low heat. Spread over bars and let cool, then cut into small pieces. Serves 36
