MAKE AHEAD VEGETARIAN MAIN DISHES FOR THE FREEZER
More and more people are turning to vegetarian foods as a lifestyle choice. Whether you are eating more meatless meals because of health reasons, as a moral choice, or just because it's cheaper, here are some great make ahead freezable vegetarian recipes. When you're home after a hard day at work, there's nothing better than pulling a delicious dinner out of the freezer or fridge, popping it in the oven or microwave and just sitting back to relax as your dinner cooks.
Plus, a diet that's low in fat and high in fiber rich foods like grains, legumes, fruits and vegetables may help decrease your risk of developing diseases. And they taste wonderful too!
I really like freezing these recipes in smaller portions, so when somebody's hungry, just grab and heat. Before you know it you'll have a freezer stocked full of healthy meals that are ready in no time.
Oniony Meaty Tomato Sauce
This sauce uses the wonderful vegetable protein crumbles I have talked about in other articles. It freezes beautifully and the sweet onion flavor is delicious.

To me, rice is such a satisfying ingredient that it makes a great substitute for meat. The nutty flavor and chewy texture of these meatballs will please everyone in your family.
Veggie Pasta Shells
If your kids love pasta and cheese, this is a great way to get some extra veggies into their diet. One or two of these shells, individually frozen and then thawed in the microwave, makes a great quick lunch.
Corn Waffles
Make these waffles on a leisurely weekend, then freeze, individually wrapped. Heat them in your toaster, then top with tomato salsa, a little cheese, and sour cream for a fabulous meal.
