Fruit Gelatin Squares

For this classic recipe, try using different kinds of fruit juices, including apple, grape, lemonade or fruit punch.

INGREDIENTS:

  • 3 envelopes unflavored gelatin (Knox)
  • 1/4 cup sugar
  • 1/2 cup cold water
  • 1 cup boiling water
  • 6 oz. can frozen fruit juice concentrate (any flavor) thawed

PREPARATION:

Lightly oil a 9" square pan and set aside. In a medium bowl, sprinkle gelatin and sugar over cold water and let stand for 2 minutes. Add boiling water and stir constantly to dissolve. Add the juice concentrate and stir well. Pour into prepared pan and chill until firm.

Dip pan in warm water just to the rim for about 10 seconds to loosen gelatin. Cut into squares or fun shapes with a cookie cutter. Remove gelatin from pan and store tightly covered in refrigerator.
