Glazed Corned Beef

Apricot preserves and brown sugar add a sweet and piquant glaze to corned beef for a nice twist on the traditional.

Prep Time: 10 minutes

Cook Time: 2 hours, 30 minutes

Ingredients:

  • 4-1/2 lbs. corned beef
  • 1 cup water
  • 1 cup apricot preserves
  • 1/4 cup brown sugar
  • 2 Tbsp. soy sauce
  • 1/8 tsp. pepper

Preparation:

Preheat oven to 350 degrees F. Spray a large glass baking dish with non-stick cooking spray. Rinse corned beef and place in prepared baking dish. Add water, then cover tightly with aluminum foil and bake at 350 degrees F. for 2 hours; drain liquid.

In a small bowl combine apricot preserves, brown sugar, and soy sauce. Spread the apricot mixture evenly over the corned beef.

Bake uncovered at 350 degrees F for 25 to 30 more minutes, or until the meat is tender. Baste occasionally with pan drippings.

Slice corned beef across grain and serve. Serves 6
