You can make a double batch of this fragrant herb dressing and store it in the fridge up to 7 days.
Prep Time: 25 minutes
Ingredients:
- 8 oz. baby spinach leaves
- 1 head bibb lettuce
- 3 oz. can sliced ripe olives, drained
- 1/2 cup diced celery
- 1 pint grape tomatoes
- 1/3 cup Herb Dressing, as follows:
- 6 Tbsp. oil
- 5 Tbsp. white wine vinegar
- 2 Tbsp. Dijon mustard
- 1/4 cup water
- 1 clove garlic, minced
- 1 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. chopped fresh basil
- 1 Tbsp. chopped fresh thyme
Preparation:
Remove stems from baby lettuce and gently tear bibb lettuce into bite-sized pieces. Toss in large bowl with olives, celery, and grape tomatoes.Make Herb Dressing: Blend all ingredients in small screw-top jar and shake to blend. Store in refrigerator.
Drizzle 1/3 cup Herb Dressing over greens and toss gently. Serves 6
