Using frozen hash brown potatoes saves you all the time of peeling, cooking, and slicing whole potatoes.

Ingredients:
- 2 Tbsp. olive oil
- 4 cups frozen diced hash brown potatoes with onions and peppers
- 1/4 cup chopped green onions
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 3 Tbsp. milk
- 1/8 tsp. salt
- dash white pepper
- 2 Tbsp. mustard
Preparation:
Heat oil in heavy saucepan over medium heat. Add potatoes; cook and stir for 5-8 minutes until potatoes and vegetables are thoroughly heated and beginning to crisp.Mix remaining ingredients in medium bowl. Fold in potatoes, cover, and chill salad for at least 1 hour before serving. 6 servings
