This delicious make ahead salad recipe is rich with the flavor of sour cream and paprika.
Prep Time: 20 minutes
Ingredients:
- 2 green bell peppers, sliced
- 2 cucumbers, peeled, seeded, and sliced
- 1/2 red onion, thinly sliced
- 1-1/2 tsp. salt
- 2 Tbsp. vinegar
- 1 cup sour cream or yogurt
- 1/4 tsp. paprika
- mixed salad greens
Preparation:
Place vegetables in bowl and sprinkle with salt. Chill in refrigerator for 1 hour. Remove from fridge and drain vegetables. In small bowl, mix vinegar and sour cream and pour over vegetables. Sprinkle with paprika, then cover and chill.When ready to serve, place vegetables on a handful of mixed greens on each salad plate. 4 servings
