Meatless Meatballs

Make a bunch of these little balls and store them in the freezer for use in easy recipes like Sweet and Sour 'Meat'ball Stew. They freeze well too, so make a double batch to get dinner ready in the future.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • 12 oz. roll frozen ground beef substitute, thawed
  • 1 egg
  • 1/2 cup dry bread crumbs
  • 1/4 cup milk
  • 2 Tbsp. mustard
  • 1 Tbsp. ketchup
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Preparation:

Combine all ingredients in a large bowl and mix gently with your hands. (You may need to add more milk or bread crumbs to form a shapeable mixture, depending on the variety of beef substitute you use.) Form into 1" meatballs. Chill for 1-2 hours.

Preheat oven to 350 degrees F. Bake meatballs for 20-30 minutes until firm and hot. You can then freeze these meatballs and use in other recipes that call for frozen precooked meatballs. Makes about 30.
