Did you ever think to put peanut butter inside your bread instead of on top? This rich bread is perfect for breakfast, toasted with jelly! Of course, you could add more peanut butter when the bread is toasted, for the perfect peanut butter and jelly sandwich.

As with all breads, be sure you measure carefully and use the best ingredients. Make sure that your yeast is fresh. Always follow expiration dates on yeast. There's nothing worse than making a loaf of bread, only to have a failure because the yeast has expired. And carefully follow the directions that came with your bread machine.

Ingredients

  • 1 1/8 cups (255 grams) warm water, about 190 F

  • 1/4 cup (72 grams) creamy peanut butter

  • 3 cups (388 grams) bread flour

  • 3 tablespoons brown sugar

  • 1 teaspoon fine salt

  • 2 teaspoons bread machine yeast

  2. Measuring carefully, place the water, peanut butter, bread flour, brown sugar, salt, and bread machine yeast in the bread machine in the order recommended by the manufacturer.

  3. Select "Sweet" or "Basic/White" cycle. Use "Medium" or "Light Crust Color" and turn the machine on. When the bread is finished it should be a dark gold color and should sound hollow when you tap it with your fingers. You can also test the temperature of the bread; it should be about 210 F.

  4. Carefully remove the bread from the bread machine pan and cool on a wire rack.

Tips

  • Always read the booklet that comes with your appliances before you use them.
  • If you haven't used your yeast in some time, here's how to check it for freshness. Dissolve 1 teaspoon of sugar in a liquid measuring cup with 1/2 cup of warm (100 F to 110 F) water. Add 1 packet (2 1/2 teaspoons) of dry yeast to the water and let it stand for 10 minutes. After 10 minutes, the mixture should be foaming enough to reach the 1-cup mark.
  • If you don't use yeast often, put it in a zip-close bag and freeze it until you need it for a recipe.
  • If your bread did not come out as expected, check your bread machine manual for troubleshooting tips.


How to Store

  • Take the loaf out of the bread machine immediately and cool it completely on a wire rack. Place the cooled loaf in a resealable bag or wrap it in foil. Store at room temperature for up to 3 days.
  • To freeze, wrap the completely cooled loaf in plastic wrap, then wrap it in foil. Properly wrapped bread should last for up to 6 months in the freezer.

Why did the top of my bread machine loaf collapse?

A loaf can collapse if there is too much liquid, too much yeast, not enough salt, the flour was too low in gluten, or not enough flour.


Why is my loaf short and dense?

There are few things that can cause a dense loaf, including using all-purpose instead of bread flour, too much flour/dry dough, too much fat or sugar, or hard water. If your water is hard, add 1 teaspoon of lemon juice or vinegar.
