Ingredients:
- 3/4 cup butter, softened
- 1-1/4 cups sugar
- 3 eggs
- 3 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 16 oz. can pears
- 1/3 cup lemon juice
- 3/4 cup ground blanched almonds
- 1/3 cup sugar
Preparation:
Preheat oven to 350 degrees. In large bowl, cream together butter and 1-1/4 cups sugar until light and fluffy. Add eggs and beat until light and fluffy. Mix together flour, baking powder and salt in medium bowl.Drain pears, reserving liquid. Puree pears in blender or food processor. Mix pear puree and lemon juice in small bowl. Add flour mixture and pear mixture alternately to creamed mixture just until combined. Fold in almonds.
Grease and flour two 8x4" loaf pans. Divide batter into prepared pans. Bake at 350 degrees for 45-55 minutes or until toothpick inserted in center comes out clean.
While breads are baking, combine 1/3 cup sugar with 3 Tbsp. reserved pear liquid in a small bowl. When the breads come out of the oven, pour glaze evenly over each loaf in the pan. Let stand in pan for 10 minutes, then remove to a wire rack to cool. 2 loaves
