Scallop Caesar Salad

This beautiful recipe is perfect for entertaining. It can be made ahead and assembled with flair in front of your guests.

Prep Time: 20 minutes

Cook Time: 5 minutes

Ingredients:

  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 12 oz. pkg. frozen bay scallops, thawed, patted dry
  • 3/4 cup mayonnaise
  • 3-4 anchovy fillets, minced, if desired
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 Tbsp. lemon juice
  • 1/4 tsp. pepper
  • 1 cup garlic croutons
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1/4 cup grated Parmesan cheese

Preparation:

In large skillet, heat olive oil and add garlic. When sizzling, add scallops and cook over medium high heat for 3-4 minutes until opaque. Set aside.

In small bowl, combine mayonnaise, anchovies, 2 Tbsp. Parmesan cheese, Worcestershire sauce, mustard, lemon juice, and pepper in small bowl.

Place lettuce in a large bowl. Toss with dressing, cooked scallops, garlic croutons and 1/4 cup Parmesan cheese. 6 servings
