Seasoned Roasted Vegetables

You can use any combination of vegetables you'd like in this easy recipe. Try broccoli and red pepper, or baby carrots and summer squash.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 lb. asparagus, trimmed
  • 2 red bell peppers, seeded and sliced
  • 1 pkg. savory herb soup mix
  • 3 Tbsp. olive oil

Preparation:

Preheat oven to 400 degrees F. Place vegetables on baking sheet. In small bowl, combine soup mix and olive oil; drizzle over vegetables and toss to coat. Bake at 400 degrees F. for 15-20 minutes until vegetables are crisp-tender. 4 servings
